If you want video, then something like a GoPRO would be the best option. I have been sailing before, not as exotic as yours, just around the UK and over to Holland. But I had 2 GoPROs mounted on different points on the boat (was only a 4 person one) and then turned them on when it looks like something interesting was about to happen (e.g. sailing into a storm).
The GoPRO 11 only lasts about 1 hour on the internal battery. So you would ether need to keep replacing/recharging them. Or get something like this so you can connect to a USB battery and it still be fairly water proof:
