I am new to the Laowa (and manual lens use on AF body), how do set to infinity?

Focus ring all the way to the right until mechnical stop or, to the center of the infinity mark?

It could be either, or neither. The only way to know for your copy is to use the focus magnifier at max power (10x for recent Canon M bodies) with the lens lens at f2.8. Focus on a subject very far away and find the point it is sharpest.

It may change slightly with the ambient temperature, as the lens might expand or contract if the temp changes drastically.

I don't have my Laowa yet. It is possible, due to the large depth of field, that distant objects may appear sharp both at the hard stop and the center of the infinity marking. That will be true when the lens is stopped down to f5.6 or 8 for sure.
