Changing exposure in video mode

Use Manual Mode with Auto ISO

I don't shoot much video, so there might be a way...

However, if you want to change shutter speed and aperture in the Fv mode, that's pretty the same as using the Manual mode with Auto ISO, which I'm pretty sure it can be done in the video mode. Regardless, almost always, you want the shutter speed to follow the 180-degree rule, which is being dictated by the frame rate. Hope that helps.
