Hi. Welcome to this forum.

Well, I'm no video expert, but have done a lot of videos myself.

As you have Canon EF-M lenses, you can film in AUTO mode. Simple and just works. At least, that's what I would do. Some 3rd part lenses may have issues when filming in AUTO mode.

For sports, film at 60 fps at 1080p. When editing, you can show slow motion, playing the video at 24 fps.

M50 can film at 4K, but with manual focus (auto focus at 4K is not reliable). And, filming in 4K gives you extra reach of 1,7x. Your EF-M 55-200 mm will be 512mm equivalent. Not bad at all.

M50 has a 120 fps video mode, with no sound, at 720p. Pretty good feature.

When filming, you can also use digital IS in M50, to eliminate camera shake. It is true you can do this also in post, but why not use it in real time, in the camera?

While filming, touch the screen on the person you want the camera to track. It will then follow the person.

And you may consider a monopod or tripod to help stabilizing your footage.

Finally, you may consider a directional microfone too, in order to get sound from the players on the field, not only from the audience.
