Personally I would go RF or FE or, if you want a crop system, E.
RF-s has potentially new bodies, but the glass is lacking, and new RF-s glass coming might be something quite hypothetical and the same might be even true for the bodies.
M has the glass, but no future bodies. RF has no third party lens options, so plan for the Canon tax for you future lenses. All in all I think the FE mount is the way to go. A7C?
Sony FE is a solid choice. A7C is overall pretty compelling, but what is it with Sony and their unwillingness to get controls/handling nailed? Would it kill them to put a front dial on their cameras? And that EVF... Tiny. I shot on a GX85 for 3 years and wouldn't want to go back to an EVF that's so small.
If I were starting out from scratch in the OP's position, I'd personally exclude Canon and Nikon APS-C. Both have consistently failed to be serious about expanding their APS-C lens lines for years. The R7 seems overall extremely promising but the ergonomic choices... ugh! That rear dial around the joystick! Why?!
Sony APS-C? Good value, good lenses, great autofocus, but the ergonomics/shooting experience again simply leaves too much to be desired for me personally to consider them.
So I'd most likely go Fuji or m43. Perhaps a like-new/excellent used condition G9, X-S10 (shame the VF isn't better), or X-H1. YMMV.
