Might have a little more info on sensor readout. CineD is a good site generally for camera testing using the same methodology etc. Not that they are without error or bias I'm sure.

You aren't 'removing rolling shutter' with Catalyst, you are using software to try to compensate for the distortions caused by multiple sources (the gyro data specifically compensating for the camera movements). Rolling shutter is quite low in the A7S3. You aren't going to find a consumer camera with one much lower (full frame). In S35 you might be getting better RS on the newly released Fuji X-H2S; but then you are giving up Sony's stellar video AF.
