Focus tracking on EOS R6 is not working as I would like

I bought the R6 over the R because I believed the AF of the R6 was much better. But it is almost unusable in AF servo mode with subject recognition, so I end up using spot AF without servo AF. I have shot a (very bad) video highlighting the issue.

Basically, I want to focus on something and have the camera track it while I recompose. But the focus boxes in the camera jump around a lot and only occasionally track the initial object where I focussed. What am I doing wrong? Or could this be due to the lens? I'm using the EF 17-40L on a Viltrox EF-RF adapter. I don't have RF glass, so I cannot test that. I do have an EF 100mm macro f2.8, but that seems to behave the same.
