Smarter Every Day has an episode where Destin did an experiment with his son. First, using his natural ears, while blindfolded, he was challenged to point to the source of various sounds. He was able to do this pretty accurately.

Next, the son's ears were modified to be a different shape (adding some sort of molding compound). He was challenged to identify the source of the sounds again, this time with ears not shaped like his own. He was not able to.

It's because the various wavelengths of sound reflect off the surfaces of the outer ear in different ways, and the human hearing system learns to decode that to determine the direction of the sound source.
