Do the readout of the sensor just continue after the shutter is closed? As in; the sensor "just contains" the data or light gathered until the "reader" "collects" the data and reset each and every pixel after readout? This would sort of make sense, since then the readout have "all the time in the world" to transfer the information into the buffer and memory card.

Yes, although at 12 fps, "all the time in the world" isn't all that much

Well, no. But at 1/8000 of a second, there's still 0,0832 seconds left to read out the sensor 🙃
