It makes perfect sense to use a flatter or less contrasty picture profile to better judge raw exposure. I've been doing this for over a decade and it works great.

For color I normally use the neutral profile with the contrast turned all the way down and the saturation down a notch or two.

If you want to get the most out of this you should be aware how much you can clip the highlights in camera before the actual raw file gets clipped. This is simple enough to test by taking a series of test images where you incrementally increase the exposure and then compare the in camera results to the raw files.
