Now on the hunt for cropped body, coming from an 80D. I know the R7 has all the bells and whistles of the new Canon tech and hardware. Does not mean it's worth that much money compared to the really cute and capable M6 Mark 2 which I tried in the store over the weekend and found impressive for its size. Mostly I do take photos on foot, while doing a bit of hiking and occasionally from hillside locations, with a small tripod in a small backpack.
Or maybe I should invest in new tech like the R7 so I don't have to change it for the next 3-5 years?
The current lens situation for RF-S is terrible, even if you adapt lenses. I spent a few months mapping out a R10 purchase - against my current M62 setup and a nikon z30.
Ironically, The EFM, along with sigmas's lenses, has a MUCH more fleshed otu lens selection- again, even if you are adapting. Certain lenses simply dont exist in crop form for the nikon z and RFS.

These are simply not options unless you have a M body. But there's another catch for your M62.
Quality control is HORRIBLE.
The m62 suffers from not great af and failing internal batteries that will keep resetting its clock. I'm on my third one (first bought NEW) because of consistent focus issues and poor images from the sensor. You may get lucky, or you're going to have to put in some real work to get a body that works properly.
You can check my post history, I've wrote about it here several times.
I'm on my third m62 that I just took out last week to shoot style and portraits. I use native and adapted EF lenses. This third body is Head and shoulders above the last two. While the AF wasn't great, it's pretty much 70/30 in terms of you're going to hit the spot that you want reliably. Lots of AF misses but lots of images that hit properly.
Unfortunately, this third version also has the failing internal battery. Swapping batteries last week, the same clock reset appeared. I'm going to call Cannon and try to demand some kind of restitution because I bought this thing new for 800 bucks. And now I pretty much have to keep this model because I don't know what kind of refurb they're going to send out next. Yes- if your NEW body isnt working great, they send you REFURBS.
At the end of the day at least this thing is working, and it is meshing very well with the sigma 30. I guess I'm just going to have to deal with this battery clock issue. I have my m62 and a smallrig cage to add weight since these small bodies don't have IBIS.
In my opinion, get the M50 mark ii. It has an upgraded eyeAF that is definitely better than the m62. Also the focus is just way more reliable. It's a really good small body to use and you get a flip out screen and evf. And it's cheaper.
RFS is just nonsensical for the immediate future. The R7 is also much much larger. I've done the math - RFS is in a terrible place right now, and it may be a long time before it gets better.
