Your selection of head and legs looks great to me, with some good features over the K5 at an excellent price. I have no pan adjustment other than friction on the K5, for example.

Here is a worst case example using a monopod standing with a K5 head, using an OM-1 with 150-400 zoom at 400mm with the 1.25x and 1.4x convertors engaged, so 700mm focal length with a 1400mm full frame field of view. I shot this on a monopod, standing. So, with your tripod/head, you should be able to do better than this, but this isn't too bad once I settled down after the first few seconds. This is in a flat profile without the correct LUT applied, so the scene is flat as posted. It is the initial movement that is difficult to control, once the pan is initiated, one can continue to pan pretty smoothly with even a budget friendly head.
