X-T3 Stationary Video Autofocus Settings

I'm using 3 X-T3's that are ceiling mounted in our church to record and livestream video. I'm wondering if I could get some suggestions as to the best settings to use, particularly when it comes to autofocus. I've been using AF-C, with face detect on. But I'm finding that often the video loses focus and focuses on the background instead of the face. Here's an example video: https://youtu.be/G3dfb8xSuf0?t=2352

The cameras are not accessible during our service, but each of them are on a remote point/tilt gimbal. So I can change what the camera is aiming at, but I can't access the focus button remotely. I'm using the following 3 lenses:

  • Fuji 55-200mm f3.5-4.8 @f3.5
  • Viltrox 85mm f1.8 @f1.8
  • Viltrox 33mm f1.4 @f2

And just so you understand, I'm not recording in camera.  I'm recording to a computer with OBS.  Any suggestions would be welcome.  Thanks!
