Experienced photographer but video newbie is asking:

a) What are the best settings for shooting sports (e.g. kitesurfing) to capture the action and also to enable you to play sections in slow-motion

b) When editing a video shot with the above settings, what are the best settings for the output. In other words, if the best setting is, say shoot at 1920x1080 50fps, when I edit the video I may choose to slow down an "action" scene to say 0.5x speed (25fps) whilst the remaining video remains at 50fps. When it comes to outputting the video what is the best setting for the entire video: 1920x1280 50fps or 1920x1280 25 fps

Any help on any aspect of videography with the M50 Mk2 (or any other top-end M-camera) especially action videography would be highly appreciated

Video capabilities on the M50 II are quite limited.  Pretty much your only realistic options are the two 1920 x 1080 PAL modes you already mentioned.  As you noted, the 50fps option will provide the possibility of 1/2 speed slow motion.  The downside to 50fps is it can sometimes look a bit jarring and "digital" compared to 25fps captures.  I would suggest testing both modes to see if you like the look of 50fps playback and also if 1/2 speed is slow enough to be worthwhile.
