R7: Difference between Servo and Subject Tracking

I've read lots of threads, but am still searching for an explanation of the practical difference between Servo and Subject Tracking.

Example:  I have shutter button set for focus.  Also set full area, animal detect, eye detect and servo with subject detect off.  I half-press aiming at my Golden Retriever (very cute, by the way).  A blue square follows her eye as she moves and keeps it in focus.  Now I turn on subject detect.  I seem to get exactly the same result, though now a double white square follows the eye.

Perhaps this is a situation where there is no practical difference and there are other combinations of settings where there is a difference.  It would be nice to have a comprehensive explanation without having to do trial and error for all setting combos.

Thanks to anyone who can help or point me to a good reference.
