What would you pick as a second camera? - X-T4 main, X100V, Ricoh GR III

Unless you desperately need the money you would get from selling one of them, you should keep all three cameras. Because like you pointed out, each one can do something that the other one cannot do.

If you only want to own two cameras, then I would keep the X100V and sell off the GRIII.

There's something to be said about simplicity and focusing in less tools particularly when they have overlap.
