When a camcorder is better, and when a GoPro Hero 10 is better

I need to do 2 things and have $1000 in funds for it.

1) I need to give lectures to a live class, but record it in zoom, with two cameras, one a closeup of my face and one capturing the slides screen.

2) I will make a youtube channel and create youtube videos about neuroscience, psychology, etc. I need two cameras, again, one to show my face and one to show the lecture slides screen.

That is enough money to buy 2 GoPro Hero 10s and HDMI-to-USB adapters. It also is enough to buy two camcorders such as a Panasonic HC-V380K.

1080p is enough. I need to record for a couple hours for both needs.

The GoPro won't have manual control over f-stop and have short battery life, but I know nothing else about the GoPro or the Camcorders. I'm an old DSLR guy, with a D7000 and a D850.

Any thoughts on which way to go? Or maybe something else entirely?
