Canon M6 II with kits lens or Body only + buy a lens? Locked

The Easy Answer: M50 II + 18-150mm

A lot of the suggestions you are getting are based on what kits are available in the USA. As you may have noticed, options in the UK are a bit different. Given your intended use of family and travel photos, I would highly recommend prioritizing the purchase of a kit with the 18-150mm lens instead of the 15-45mm lens.

In the US, the M6 II is the only M camera kitted with the 18-150mm. The R10 and R7 are also available with a 18-150mm lens. All three of these options are probably pushing the limits of your budget. Looking at Canon.co.uk, as well as a few major retailers in the UK. it does not appear that the M6 II + 18-150mm kit is even for sale in your country.  The M50 II kits with the both the 15-45mm and 55-200mm also do not appear to be an option in your country.

Here is what I noticed is available (and in stock) in your country; the EOS M50 Mark II kitted with the EF-M 18-150mm f/3.5-6.3 lens. It is in stock at Jessops and the Canon UK store for only £949.00. At that price, you might have enough money left over to add the Sigma 30mm f/1.4 DC DN (£289 at Wex), or the EF-M 11-22mm f/4.0-5.6 (£369 at Jessops).  The former would be most beneficial for you family photos and the latter would be most beneficial for your travel photos, but both lenses have applications for either use case.  This kit fits your budget and offers some major upgrades in capability over your G7X II due to the much longer zoom range.

While the M6 II has some higher level capabilities than the M50 II, most of the capabilities are unnecessary for your use case.  There is very little difference in AF speed between these two cameras.  The much higher price of the M6 II means you need to make major compromises in your lens choices to fit your budget.  Basically, at your budget, the M6 II would be a case of spending more, but getting less.
