For your application, the below Canon choices are available. I have my preferences which are specific to my needs.
I'm understanding you don't have any interchangeable lenses. If that is the case, you should also evaluate options with Fuji, Sony, Nikon, Oly, etc.
M has been put in sort of a limbo state by the introduction of R7 and R10 and perhaps an R100 by next year
lenses make a body sing and should be a key consideration on what your vision of your roadmap is
lots of considerations, hard to say what I'd do under your framework
if you'd be happy with just one lens for two years I'd probably go with the R10 and RF18-150 kit and hope they develop more that you would want down the road

Yes, for a one-camera system the R10 and RP are both viable choices, if one doesn’t mind a bump up in size (and cost).
agree - both viable - on the list above
for me the considerations are glass, size, cost, IQ, features, and how it fits in with what I already have.

Right now I would definitely prefer the EF-M selection of lenses over the RF/RF-S if going the crop sensor route.
at this moment in time, agree. if the op needed everything now and could afford it:
I'd go with the M18-150 kit + m11-22 + m32 f1.4 - on m6II
If Canon doesn't port over the m11-22 and m32 f1.4 to RF-s, that is an issue for me with the R10 imo.
Also I like my IQ and cropping power at 32.5 MPXL but that is contingent also on buying DXO PL5 with Deep Prime for noise reduction and shooting RAW to give the advantage
The R10 promises better subject-detection autofocus than the M6ii however, but I’d bet the M6ii’s Spot AF will perform at least as well (it does vs my R5 and R6).
old fashion spot works very well
but if op is limited in funds and is fine with just one lens for quite a while -- while things develop, then the operation of the R10 for the masses, versus the old timers spot focus, seems more fun with that R3 like AF.
You are better suited to offer advice regarding the RP (since you own it). What would you think about going the FF route with that one? Be prepared to have nnowak come in and blather on about how it’s unsuitable due to equivalence though!
each of these cameras in the list above, depending on glass, have certain advantages and disadvantages
my RP was purchased in 2019 for a great deal: $850 for my RP and $899 for my RF 24 -105 F4 L. It is a great one lens all-arounder both inside and outside. It starts at 24 mm and gives 105 mm at f4. I also have the very good RF 85 F2 IS portrait lens for the RP. The RP only gets 4 fps but that is fine with me for these two lenses.
the RP is good in low light, but for landscapes at iso 100, I prefer my m6II + 11-22 and the extra dynamic range and the 32.5 mpxls.
at 85 mm fov, I prefer my RP + RF 85 f2 IS over the m6II + siggy 56 f1.4 because of the added IS
At 50 fov, I prefer my m6II + 32 f1.4 over RP + RF 50 f1.8 because the 32 f1.4 is sharp across the frame at f1.4 and the RF 50 has to be stopped down
I prefer the light weight of the m6II setup - but I prefer the bright zoom setup of my RP
I'm a specific use case because I do events and personal stuff and throw multiple cameras and lenses into the mix
As I said - with limited funds - it will be a tough call for the op.
if op wants three lenses now and that is it, one is hard pressed to beat the m6II + m18-150 + 11-22 + m32 f1.4 + dxo PL5
choose lenses, then look for the body that meets your needs
the problem with the R10 is that there is just one lens that makes sense - the RF-s 18-150, and you may not get an RF-s 32 or an RF-s 11-22. So in other words, are you willing to buy and wait for the prospect?
the other option - is don't buy now, let it all shake out
