Any trick to pull focus on a focus-by-wire lens?

I shoot with GH5 and the P/L 12-60mm lens in 4Kp60.

One of the effect I try to achieve is to start with the subject out of focus then gradually bring it to in-focus like the attached video.

There is two way I know how to do it but both have shortcoming.

The first one is to manual set the camera out of focus before pressing the start button.When the camera is filming, I touch the focus point on the LCD screen (may have to move the figure a little to get it going) and the camera will bring itself in focus.

The problem is the time it takes for the camera to be in focus is very short.

In the video, I slowed down the clip to 40% (24 fps) and still it is faster than I wish.

The second way to do it is to turn the focus ring while filming. The problem is, with focus by wire lenses, it is very hard to have a smooth continuous transition. If my turn hesitates a little, the focus point would stop totally and then pick up again.

Anyone have any trick in doing the slow focus smoothly?
