i basically set Auto-ISO and didn't bother much about high ISO but going by the comments it seems like it is worth setting the ISO manually to preserve details and colours.

AIUI the D500 is ISO-invariant from 800 (?) up. It seems perfectly reasonable to use auto ISO and concentrate on other things. It's a good idea to use as low a shutter speed as you can get away with, for example. Steve Perry advocates getting the shot, then lowering shutter speed gradually. This actually gives more light for the shot. The photos you posted have some haze, which may just be environmental and have nothing to do with the ISO. If I'm not mistaken, the recent versions of Adobe software have a haze filter, which should do basically the same thing that my local contrast enhancement filter does. It should be worth a try on these images. FWIW
