I can't claim to be an expert in hiking, but if the weight/size (or budget) aren't an issue, why not?  It looks like a great lens from all the initial reviews.

I'm actually looking to get the 70-300 to supplement my 100-400 and 50-140 for the shorter hiking I do. I use the 50-140 currently for shorter hikes, but also like the idea of a bit more reach while keeping reduced weight that the 70-300 would offer.  The 100-400 is usually a little too much weight/size wise.  The 70-300 feels like it would be the perfect  middle ground.  Reports/reviews seem to indicate that adding the 1.4 to the 70-300 helps with even more reach (minus any focus degradation) without too much of a quality hit.

It's nice to have options.
