I prefer the legacy controls vs PASAM as well yet every camera has some things that are super easy to do and things that are not as easy.  This is why one needs time with a camera to find a setup that works for them.  I like to simplify and find a few setups that I use for everything.  For example on X-T series cameras I use the following approaches:

- Aperture or program mode using exposure compensation

- Manual exposure and I vary the ISO

For both I'm in zone AF unless I need very fine focus in which case I use single point of manual focus.  I'm always in AF-C and high speed burst mechanical shutter.

This setup allows me to avoid having to change settings if action starts.  Even for things like waterfalls I usually will shoot a small burst as things are always changing.  Portraits of people, I capture multiple samples and there are always differences.
