How can I change default apps for RAW, JPG etc in Windows 11?

Hi, PC folk

I just "upgraded" to Windows 11 and now all my picture formats - PNG, JPG, RAF, NEF, RAW etc - open in the mostly-awful Photos app. When I try to change the defaults via the Control Panel, the option to set defaults for those filetypes is simply not there. I can assign zillions of filetypes I've never heard of to the GIMP, Darktable, Irfanview or whatever I fancy, but Photos seems to have permanently captured all the common image formats, to such an extent that they don't even appear in the list any more.

Is there a workaround for this? Is it a fault? Is it a designed "feature" of Windows 11? If it is, I'm downgrading.
