You gain speed but actually get worse reliability since if either drive fails you lose potentially everything.

You're better off looking at something like TrueNas aka FreeNas if you're handy enough to build a system. Prebuilts you're paying for them to design and build the thing.

If this stuff is important you need to include some sort of offsite storage. It could be the cloud but that requires a good connection.

One more thought. 10TB sounds big but even with some current cameras it's not that much.
