There is a setting in the camera connect app to download them as CR3. The phone is probably downloading the preview thumbnail in your case. If you change your settings, it will download the cr3 file as it is, and your phone will indicate that its a raw photo file in the caption. Apple devices are very good in handling craw files. I recommend using Adobe Lightroom, which costs $10 per month, but would make the process much smoother.
I often connect with cameraapp to download selected files to Iphone, then upload them to Lightroom from my phone. If I shoot many photos with burst, this workflow is infeasible. Then I use a computer to to download the selected files, using Adobe Bridge (or XnView). After that I upload selected photographs to Lightroom.
Lightroom works on all devices. Android, Iphone, Ipad, PC, Mac, almost anything except Linux PCs. Even on Linux, you can use the web interface. It syncs automatically on all devices, and it makes the process much easier. As long as you don't want to do heavy editing (like removing complex objects) or noise reduction Lightroom is very convenient.
Many people use Lightroom directly to download files from the SD card, but I often have very low keeper rates if I use bursts and have limited storage in my Adobe Lightroom plan, so I take the longer route of downloading them without Lightroom.
