Where is the successor to the original EOS R?

I don't see anything there that fills the R niche.

Your are right in the observation that the R is a niche product by Canon. I don't see Canon replacing the camera. Like others have said, the R was a camera to help Canon quickly enter the mirrorless market. I personally do not see any replacement coming from Canon in the R niche. I do think Canon will replace the RP with a new low cost FF RF camera that will be the new offering for those who want a lower priced FF option. I see the new camera as the RF 6Dx replacement. I believe the camera will be an upscaled RP, but R users will be disappointed in the offering.

Hopefully the new RP will have a new advanced sensor, not a retread like the R, RP, R7.

Right now with the RP, R, R6, R5 and R3 Canon has a nice spread of price points. I expect that they will continue to keep the R and RP for a while longer as they fill out the range. It seems to me that we should expect longer product cycles and eventually some FF product will fill the price point of the R. I don’t imagine we’ll see a stacked sensor in a R replacement for a long time.

I agree. I think this is the Canon way. I wish they would be willing to push a faster on stacked sensor development. At Pictureline last week another person asked the Canon rep why the R7 did not have a stacked sensor and she was blunt and said the price point would have been very different if Canon had developed a crop stacked sensor. She said Canon wanted a more affordable option.  I am not going to argue the Canon business model, but it is what it is.

I doubt Canon has produced a 5D MK IV sensor for awhile. My guess when inventories final run out products will change.  I would love to see a modern FF affordable offering from Canon in the between $1,500 and $1,800. I am not sure Canon sees that as a market. My guess would be Canon is going to update the RP with a new name and slot it in around the 6D MKII. I would expect this Camera to be a pretty nice upgrade from the RP, but not sure R users will be as happy. I don't think Canon will have two sub $2K RF FF offerings in the future.  I have no knowledge, and I don't look at this from a technology perspective, but from my years in enterprise business.  I could be wrong, but looking at the small size of the dedicated camera market and industry projections I think my prediction is reasonable.
