The EVF is a preview of the chosen film sim and custom jpeg settings. If you prefer a “flatter” rendering than the standard Provia sim, simply choose a flatter/lower contrast option like Pro Neg Standard. As a RAW file is only unprocessed sensor data, it has no look of it’s own (it’s only a potential image). If your primary goal is to estimate RAW exposure, the highlight warning blinkies are the most reliable way to go - turn off the histogram, find combination of film sim and jpeg settings that will give you a good view of what’s going on, and simply adjust your exposure so that the brightest highlight detail you want to keep is just below blinking and you will get a near perfect RAW file to work with every time. The blinkies aren’t a perfect a RAW exposure meter, but (unlike the histograms) they are reliable and work very well with any film sim in any situation. As I’m sure someone will bring this up, using NATURAL LIVE VIEW will give an EVF view that will try to emulate an optical viewfinder - which might look nice, but has little or nothing to do with the exposure you’re trying to dial in, and the blinkies will not work properly either - kinda defeating the primary advantage of using a mirrorless camera. Not recommended.
