There are a few threads floating around, but the biggest difference is that the R7 and R10 will use the R3's AF setup philosophy. And that setup is leaps and bounds a better way to do it. In the R5/R6, you can only get the advanced tracking in the AUTO mode and single point Initial tracking mode. There is an option to use all the other modes and get face and eye tracking but it works a little bit like a hack and ultimately is a little flawed.
In the R7/R10, it seems to mirror the R3 where you choose what ever AF grouping you like and then choose if you want the advanced tracking turned on or off. Basically unlocking face and eye tracking in any mode of AF point selection. This makes the camera much easier to tune to what you are shooting and how you like to shoot.
