Be happy with the X-T2.

If you have the dough, get the xt3.

1) faster processing for everything.

2) Better features: don't need the grip for audio out or boost power, usb 3 (if you use Fuji X raw, this counts for extra speed), pop out diopter adjustment, refined knobs, higher rez evf, lower base iso, touch screen, better AF, better burst shooting and blackout-free live view, Color Chrome Effect featuring deeper colors and gradation in highly saturated subjects, total of 16 film simulation modes including Eterna

3) Better wifi transfer

You get better speed with the X-T3, but not much else that will make much a difference for the OP’s stated shooting needs. Personally, I much prefer the taller X-T2 knobs, I hate the crappy and almost unusable rear dial and sloppier shutter button mechanism on the X-T3, and an not thrilled with the noisier high ISO performance either, especially with the electronic shutter. If faster AF-C tracking and better video aren’t primary concerns, the X-T3 really doesn’t offer all that much to the happy X-T2 shooter. There are some nice refinements here and there (the expanded PDAF focus point coverage being chief among them), but it’s much the same camera with no improvement in image quality whatsoever. I bought one, shot with it alongside my X-T2, and sent it back. Bought some new glass instead.
