You're always going to have some sort of highlight.  Angle of incidence is equal to angle of reflectance.  What I do is get the shape of the bottle drawn how I like, then either learn to love the reflection, use dulling spray to mute the reflection or Photoshop to eliminate it.  You can craft a nice long soft reflection and then PS out sharp speculars, too.  The only way you will get a soft reflection to run the entire length of a bottle sitting on a surface is to elevate the bottle on a rig of some sort.
