Where / how to learn about video formats

I have a new Canon EOS R5 C and it has lots of various formats that it can record in. My particular situation is I will never be in a time crunch so I will have the time to create proxy files or whatever else is necessary.  Currently this is just a fun hobby and, maybe if something is taking a very long time, I will research how to speed up that piece but I'll cross that bridge if I ever come to it.

The other particular about my situation is I "never" delete photos or videos.  The  never is in quotes because if it is a complete waste then I'll delete it but generally I keep everything.

I use Adobe products: Premiere Pro, After Effects, etc.

So it seems to me that I would want to most compact format in whatever frame size I want to shoot.  But with very little experience, I thought I would ask here to see what the basic recommendations are, rules of thumb, etc.

I realize that this is a huge, open ended question thus the original way I phrased the topic: where / how do I go to learn about video format, etc.  And if part of that answer is "go do it", then, fine.  I'll go out and experiment, etc. and see what works for me.
