I am writing this in 2022. I bought the Fuji X-T100 after looking at hundreds of sample photos for just about every cameras.

I originally came from the Olympus family of compact cameras. I loved Olympus colours. With the advent of the smartphone, Olympus stopped updating their advanced compact cameras. However, some of us do want pocketable PASM camera. A smartphone is a pain, if you want to adjust settings to get the right shop.

I have the Olympus XZ-2. However, they did n't update it. I looked at advanced compacts from Canon, Sony, Panasonic, Fuji..... none were able to match Olympus colours. I loved the sample image images from the X-T100. The pictures were very sharp. The colours were great.

I decided to buy the Fuji X-T100 and found the image quality is satisfying. The colours are better due to their new Bayer sensor.

A lot of manufacturers, use the same sensors. So the images look all the same. The colours are off. So I have pleased when Fuji developed their own sensor.
Most of the other Fuji camera use Xtrans sensor, which seem to have a grey tint.

You mean JPEGs are less saturated by default?

great for artistic phtos, but I like colours to be dynamic and accurate, but not vibrant. For some reason people like Fuji X-trans, but it is n't for me.

I suppose you're only shooting JPEG? Not sure if you're aware, but most Fuji cameras offer extensive fine-tuning of JPEGs, including the possibility of saving multiple presets. If you don't like the default saturation, contrast, WB tint, etc, of some film simulation you can simply create your own custom preset and save it. I believe the X-T100 lacks this functionality (although you can modify the individual JPEG settings in the q menu)

Since releasing the X-T100. Fuji have released the X-T200, but I don't like the colours. For me it is n't worth upgrading to.

The only down side on the XT-100, is the slow AF.
It is n't the perfect camera, as it is heavy for me. I want a pocketable camera.

If you want something truly pocketable, take a look at the Ricoh GR III or IIIx.
