I don't use the 300 for BIF, but I do use the 2500 for planes in flight. They're kind of similar with the moving subjects. The bottom line is practice, practice, practice. Settings can certainly help some, but being able to keep up with the subjects and panning smoothly takes practice.

I would follow a lot of what Sranang Boi suggested. For AF area, I use a relatively small box in the center, or a "+" symbol with AF boxes. For planes, I always use the shutter priority mode, but I would consider using aperture priority for birds.

Are you using the screen or viewfinder? I'm a viewfinder person, since I grew up on film SLRs. If so, then consider keeping your other eye open. It takes practice, but I find it easier to track the subject.
