I would opt for the X-S10, it has superior AF to the X-H1 and if you want to try photographing the birds in flight you will appreciate this. IBIS is also very useful when you are on the boat around the Farne Islands photographing the cliff face bird habitats.
WIth your X-T3 issues though, a short term solution would be to assign the shutter speed control to one of the command dials and make adjustments that way? Also, balance often comes up with the 100-400mm and choice of camera / use of grip. Yes it does balance better but I do think this is often a familiarity concept and how we feel holding the camera. It's surprising how quickly we can re-familiarise oursleves when we change gear and modify our technique accordingly. Yes, balance with a large lens is important but I do think at times we don't give ourselves enough credit at working with what we have.
Enjoy your trip to the Farne Islands, it is my 'local patch' and I've already been out there a couple of weeks back. A good friend of mine owns the Serenity Boat Company and he has excellent boats, catamarans with ther twin-hulls and 360 degree deck access make for steady and versatile (as you can get on a boat!) photography platforms.
