I do not have the Canon R camera in question. I own one MILC, a Nikon Z7 which is roughly same age as K1-II. My newest flash is Nikon SB910, which is 8-10 years old and not one of the newer units which may be more optimized for Z.  When camera is placed in M mode, and exposure set, the image in EVF does not change when turning the flash unit on or off. A guidebook from Thom Hogan also seems to suggest that the final image, simulating the additional input of flash, is not previewed in EVF. I have no knowledge on how more recent models of these MILC or strobes handle that pre exposure EVF scenario.

For your other scenario, when I place a window in background and use highlight weighted metering, the interior foreground furniture appears dark in EVF with flash on or off. The exposure of interior furniture is easily controlled with flash in final image, but is not evident in the preexposure EVF.
