Interesting question. In my experience it depends on the camera:

I'm not sure about my Ricoh GR, but it's not a camera anyway I use with studio flashes.

My Sony MILCs have the option to switch between two modes: a) show all camera adjustments in the viewfinder (e.g. chosen manual exposure, EV compensation etc.); b) show a brightness adjusted pic for best viewing (ignoring actual camera settings). In a low illuminated studio setting you would switch to b) to be able to use flash (especially manually controlled studio ones).

My Olympus M10 Mark II seems to display always a mode b) pic in the EVF as described above, on the display it shows a mild variant of the a) mode - it is darkened / brightened according to the settings, but this adjustment stops somewhere after +/- 3 EV is applied (picture doesn't get brighter / darker after that). Interestingly enough the M10 II also has a OV simulation mode I hadn't used before (thanks for making me try! ) that increases dynamic range; it works in the EVF only.

Or with backlit scenes, where you use the flash for fill-light for the person in this scene....what do you see from the dark person in the EVF ? This you could ask your brother in law.

Haven't tried this one yet; could possibly vary depending on the EVF mode used, and I also think that the limited DR you correctly mentioned would play a role here.
