The G7x III wins for YouTube, but for stills? G5x II is quite a bit better. I don’t do the YouTube thing.
Now the G7x III is no slouch btw. For the price it’s not bad. But the G5x II’s reach is appreciated.
Took a look at one sample and it makes RF 24-105 stm look like a $3000 ultra sharp L prime in comparision, ouch.
I am considering RX100 mk 7, G5 X mk II and ZV-1 also.

Not to insult the G5X II, M6 II, or smaller formats, but I'll tell you having just had the M6 II and now the G5X II, dare I say, they don't matter. FF is where it is, Canon isn't wrong. Harsh.
Now an R won't pocket. A G5X II will, but yes, huge reduction in IQ. It is what it is.
Regarding your options:
1. RX100 VIII will triumph for outdoors/sports needs. It will flounder indoors or low light; SOOC JPEG colors and handling.
2. G5X II will triumph in all conditions, but, lacks in AF for sports-like needs; doesn't have the sheer reach of the RX100 VII. Excels in SOOC JPEG output and handling though.
3. ZV-1 is good if you want to VLOG, and do Sony. Honestly VLOG-ing though? G7x III. Colors will eat you alive (on the ZV-1) if you don't plan to grade your footage. 30 or 60 frames per second of bad colors is REALLY noticeable vs stills. Whatever shortcoming a stills solution has, gets amplified by video. Things like your picture profile which are often overlooked on Canon's despite the wide number of built-in options, or shutter speed selection, become immensely important in video. I can't stress enough that despite DPR's predilection for Sony cameras, don't fool yourself, their colors hurt in video. Bad. Where I can say the RX100 VII is a good choice for pocket sports, I can only shake my head at the ZV-1 for it's intended use.
Side note, I considered the RF 24-105 f/4-7.1 IS STM, but it won't pocket. It's certainly small enough when married to say an RP. It'd be interesting if Canon does an R sensor or R6 sensor in an RP-like package.

It's a big jump in bulk going RF compared to the G5X II, or even the M for that matter.
