I don't have issues with IS on my VII and there is a grip you can add to improve the handling.
For sure it is the best pocket camera I have used in the many years of Digital photography. Very close to what I get with EOS M6.
2 cents, take what they're worth...
The G5X II, excels in the focal range it provides, 24-120. Once you start needing more reach than 120mm, usually it's due to action/sports/wildlife where autofocus matters more, an area the G5X II does well, so long as it isn't continuous burst but that’s where you usually wants continuous drive and ai-servo (C-AF); reach. This is where either a Sony RX10 IV, M6 II + EF-S 55-250 IS STM or EF-M 55-200 IS STM or Sony A6xxx + 70-350G start to make more sense than a RX100 VI/VII.
Granted, if you need a single camera, and have lots of light, the RX100 VI/VII makes a lot of sense. But, in lower-light, usually indoors, that's where 24-120 with a faster lens, and less AF for continuous AF, makes more sense.
As far as IS working/not working, I've shot many RX100s, but not the VI/VII, so I can't knock it but I will say at 200mm, it’s a bit of a reach, pun intended, where more reach and AF perhaps make more sense. Again, Sony RX10 or APS-C apply.
