Here is my set up that I just put together a couple days ago.

I just upgraded to the Canon 70-200 2.8 L III IS from my previous f4 version. This lens is considerably heavier than what I am accustomed to using.

I shoot motorsports every weekend on both Fri & Sat at 2 different tracks and being I am in my mid 60's, I am concerned that carrying that heavy of a lens around my neck for hours would become an issue. A shoulder type strap seemed like a much better idea.

I went with a Black Rapid shoulder strap that is attached to the lens collar that came with my lens. I have thoughts about trying out a monopod (again for the fatigue factor) and wanted a quick release ARCA style mount attached to the foot of the lens collar. This ARCA style mount from Fusion Gear has a really beefy flip out ring to attach the Black Rapid strap, and If I decide to use a monopod, I can undo the strap and slide the plate into the monopod easily. The smaller strap is a safety strap clipped on to the ring, just in case the quick release plate became unscrewed somehow. I have no fear the camera can hit the ground.

I now have the strap on my left shoulder with the camera hanging horizontally on my right hip with the lens pointing behind me. Pretty easy to grab it and shoot. In addition, it also allows me to keep my second camera with a wide angle lens around my neck at the same time if needed.

Alternatively, I you don't care about having a quick release plate, you could just attach a strap directly to the lens collar foot.
