Just a quick additional question - is there any difference between the Fuji film simulations when applied by the camera and when applied in Capture One ?

Yes, as in Lightroom. Close enough, for the most part, but not exactly the same.

In either case, you'll get a relatively close version of the film sim, but without any of the other proprietary jpeg processing that would be applied in-camera.

True. It would be more appropriate to say it is an interpretation of the profile, but not with the same tone-curve, NR, sharpening, or white-balance.

They are quite similar, but cannot by definition be the same.
