The JPEG is simply taking the RAW data and processing it in camera. You could achieve the same thing in DPP if you’re shooting RAW, but it’s not “baked” into the file so you have the full latitude with your data.

If you’re using LR or another RAW converter, then you should use the camera profiles within the software to mimic how Canon would process them.

The source data is the same for your RAW exposure and the JPEG that’s rendered—they’re not separately metered or separate sets of data.
