Colourwise, it's a matter of taste. Apart from the DP2M, I have had bad experiences with Foveon colour, the overall colour of Bayer just looks more plausible to me, Foveon is prone to freaky weirdnesses from time to time. But as I say, all photographic colour reproduction varies from precise hue accuracy deliberately to create a unique look for each vendor. Foveon included. Taste and processing matters far more than the tech.

The rendering of colours depends on the profile used to convert the raw file. SPP offers a choice of ready-made profiles, but there's no way that I know of to use a custom profile of your own. Affinity doesn't accept input profiles, but Adobe Camera Raw does.

The simplest way to make a custom profile is to photograph a Color Checker and use the program from X-Rite to create a named profile. You need to save a DNG file from the camera (easy with Quattro and fp models) as the program accepts only DNGs.

Besides ACR, Raw Therapee can use dcp profiles. There may be other programs that do.

Print quality is a different discussion, I think.

I have spent a lot of time over the last year watching a lot of youtube photography channels that are primarily based on documenting photography outings and the nuts and bolts of field composition and photo spotting. It's proved much more illuminating spending time on how photographers work the scene and compose their images. Of course these photographers talk about gear as well, but it's amazing how pragmatic they are - more interested in quick release clips and magnetic filter holders than the latest sensor. Well worth some investment in time if you more interested in improving your photography than your gear.
