You can define what magnification you want on the first step.

And is there any way to have a quick change between ES and MS? I often use flash and normally ES for stills if possible (I rarely do video).

Custom menu entry. Or C1 or C2.

I also found the exposure comp. control much better on the M6 compared to the dual function wheel on the M6-II.

It's the top button on the back wheel. Do you mean the dial function wheel? You can redefine that to do just one action.

Prepare to go through all the buttons, and study all the ways you can redefine everything and make custom menus.  Unfortunately, it's too big a job to guide someone through all this.
