If I were you, and based on what you like to photograph, I recommend waiting a little while longer to see if Canon releases a RF mount APS-C camera. The RP and R are not good for moving targets and especially BIF. Their AF systems aren't up to the task and their burst rate is abysmal. The R6 has adequate AF and burst rate but its 20mp sensor means you will need longer, heavier, more expensive zoom lenses to get the reach you will need for a full frame camera. APS-C's 1.6x crop factor and pixel density would much better suit your needs and I expect Canon's first R system APS-C camera be basically be a R6 with an APS-C sensor and a lower price.

I don't disagree with this. I don't mind waiting a bit (couple of months? summer?) but I don't want to wait till next year. I think if it comes down to that I'd rather get something now with the RF lenses and upgrade the body later.

Date the camera body, marry the lens is how the saying goes. If you really want a camera, you could do a lot worse than an RP if you put some good glass in front of it.  On the plus side, the RP camera bodies seem to be holding their value pretty well on the used market, so you likely won't be out a tonne if you go to sell it later on down the road.

If you are intent on shooting Canon RF, my recommendation would be the RF 35mm f/1.8, the RF 24-105 STM kit lens and, while not my favourite, the RF 100-400 or Tamron EF 100-400 with an adapter. I would also take a good hard look at a Nikon Z5. Their S-line lenses are stellar and won't break the bank like Canon L lenses.
