If you are going to process the raw file yourself including doing your own noise reduction then yes I think "baking" signal processing in is not desired.

At a minimum I would like to be able to turn it off in the camera menu.

i think you should try to correlate your measurements ( which obviously give a very unique and detailed view ) into what it means for dynamic range, iso / noise sensitivity, color rendering, etc.

That will probably be very difficult.

Not exactly sure what you're asking but you're probably right that it would be difficult (impossible).
