Understanding Containers and Volumes

I'm trying to get up to speed on how Mac hard drives are now formatted and how they use containers and volumes.  I have been using on old Mac with an old OS and am unfamiliar with how these containers and volumes work.

I have experience partitioning drives and with those, there are desktop icons showing each partition and they perform as if they were separate drives.  I could write and save files to specific partitions.  But my new Mac will have a container with a volume for the OS and one for the data.  And I will have the ability to add more containers and volumes, something similar to partitioning.  But I don't understand how I would then work with those or even find and recognize them.  Help needed.
