Really, LOG isn't that hard to grade (color correct) nowadays with all the LUTs that are available.

The main issues - in my own opinion - are actually exposing it correctly at the time you are shooting, as well as deciding on what you are willing to sacrifice. Also, if you shoot LOG, there are times that you will almost certainly need ND filters.

LOG is designed to work on BRIGHT contrasty days, and / or to give flexibility in color grading. IMHO, it is a mistake to shoot LOG on a day without significant contrast (unless you really are going to give a particular look later when post processing).

Also, LOG can be noisy in the shadows, so one is often confronted with the decision to raise exposure by a stop or more when shooting (depending on the camera) and lose a stop of headroom in the highlights, or preserve the highlights and live with some noise in the shadows.

But it is definitely something you will want to practice with several times before "going prime time" with it.
