600 F4iii producing somewhat blurred images, despite being tack sharp in viewfinder, all of a sudden

I'm using an R5, adapter, and an EF 600 F4 iii....I used it the other day and everything was fine. I went to shoot some birds in my yard this morning and 95% of the shots look like the lens had a thin layer of vaseline smeared over it, see the shot of the dove below... This is with 1/1000+ shutter speed...on still birds, slow birds, even tried on a tree trunk a few times, all the same result. The weird thing: in the viewfinder when I'm shooting everything looks tack sharp.  Also, tried from a tripod and got the same results as well. I switched on a 24-70 F2.8 and shot some things around my yard, and all those shots were tack sharp.

So it seems to be an issue with the lens (or lens & body combo)...any ideas? Again, tack sharp in the viewfinder while shooting, but as soon as I review the shots in the camera they're soft as heck. This is regardless of shutter speed, tripod, movement of subject, etc.
