Yes, all of the Z lenses are better than their equivalent F version. Even some of the non-S Z lenses, such as the 24-200 superzoom, are amazing sharp and have high image quality (but of course, not the speed of a 2.8 lens). The FTZ adapters are great if you want to use your existing F-mount lenses, but I would strongly recommend investing in the Z lenses when you can. I don't have any of the exotic F-mount lenses, but I would certainly hold onto those until there is an equivalent Z-mount lens. But for the more common lenses, I would get the Z version. For example, the Z 85mm f/1.8 is better (IMO) than the F 85mm f/1.4, and the extra 1/3 stop of the F lens isn't going to make much of a difference. I am selling all of my F-mount lenses except for those where there isn't yet a comparable S lens.
